APPLE COFFEE CAKE

Well here we are again, another week has gone by & it's time to enjoy lots of fantastic recipes hosted by http://blessedwithgrace.blogspot.com/ today I am sharing an old recipe that I cut off the back of a Bisquick box way back in the 70's , can you believe I've kept it this long? LOL I can't tell you the times I made this up , it was the perfect thing for when company dropped in or something quick & good to go with morning coffee

TOPPING : mix 1/4 c sugar

2 tbsp Bisquick baking mix

2 tsp ground cinnamon

2 Tbsp firm margarine or butter

Blend until crumbly, set aside

MIX

2 c Bisquick baking mix

2 tbsp sugar

1 egg

2/3 c water or milk

1 c finely chopped apple

Heat oven to 400, grease round layer pan 9x1 1/2" or square pan 8x8x2 ( I always just used one of my round cake pans) prepare topping, mix baking mix, sugar, egg & water, beat for 30 seconds, stir in apple, spread batter into pan, sprinkle with topping, bake until wooden toothpick comes out clean 20-25 min. refrigerate any remaining coffee cake, makes about 8 servings
