LEMON TART


Well it finally got cold here in Ala. not sure how long it will last though for we have the craziest weather, we hope you've had a chance to make our sweet potato pie, we made some the other day & can't keep our face out of it LOL
This week I'd like to share with you a very quick & simple recipe I got my my husbands aunt Hattie, Lemon Tart ,if you have the basic cooking necessities then all you need is a lemon & a pie shell , it's that simple!

LEMON TART
1c. sugar
2 tbsp. flour
4 eggs(beat in a separate bowl)
1 tbsp. lemon rind
juice from 2 lemons (about 6 tbsp.) more doesn't hurt lol
1/2 c. butter (melted)
1/2 tsp. van.
1/4 tsp. almond extract
1 frozen pies shell
Preheat oven to 350
stir together sugar & flour
add to beaten eggs, stir till slightly thicken about 3 min
stir in lemon juice from lemons, lemon rind,butter,van. & almond extract
pour into pie shell
Bake 20-25 min
* roll & lightly squeezed lemon & place in microwave for 30 sec. & it'll give you twice the juice
* this pie will make up thin & thick like a custard pie with the same punch of a lemon pie
