It has been a big weekend of fun & lots of eating with the grand daughters this week,last Sunday was Homecoming at our church, I did my dessert buffet in an a Americana theme, for the grand daughters we had a Mexican party & a Luau party, be sure to check out more TMTT over at http://blessedwithgrace.blogspost.com/
here is my dessert buffet I did for our church's Homecoming, they leave all the decorating to me & I love it!

I marinated stew meat in ranch dressing then inserted onto a wooden skewer with green bell peppers, onions & pineapple, just meat & onions for flavor were made for the kids
The watermelon, I cut in 1/2 then cut4 long slits longways then across , kinda like when you cube an onion, then I pull out the chunks, hulled out the hull & replace the cubed watermelon using it as a bowl
My daughter made the little flip flops for our cupcakes, they are made out of fondant icing, I baked regular cake batter, iced with cream cheese icing & sprinkled gram cracker crumbs to give a sand effect

Chicken Enchladias, tacos, taco's, salsa, cheese dip, chips, cinnamon chips & all the fixins makes for a great Mexican party

You ask about the chickpea flour..It just seems to stick to things a little better that regular flour. You can use either and I am with you on the fish head....I made it for Hubs...I don't eat things that look back at me either.
