the second attempt was much better after some tweaking
CAPE COD APPLE MUFFINS
2 cups flour
1 cup sugar
2 teaspoons cinnamon
1 cup oil
2 cup shredded carrots ( I used 1)
1 large apple shredded or chopped (I used 2)
1/2 cup nuts –chopped
2 teaspoons vanilla flavoring
1/2 cup raisins
3 eggs –beaten
this recipe also called for:
1/2 teaspoon salt
2 teaspoons soda
I did not add these 2 ingredients to the second batch, the salt was over powering & I think the soda was the culprit to the mess lol!
mix dry ingredients
add remaining ingredients & mix well
fill muffin tins 2/3 full
bake 20-25 minutes @ 350
apples will make a difference in the taste as well, mine weren’t the sweetest but ok, the next time I make these I will invest in sweeter apples & maybe add a touch more cinnamon “just a touch’!
after they cooled , I wrapped them individually in saran wrap & put in a gallon zip lock baggie & froze them, just take one out at night & place in the fridge & your ready for breakfast!
